I’m not much of a food-picture guy—especially the sort of textless and contextless reblog fodder that bloats Tumblr dashboards every day—but I will bend that rule this once to say that it is sushi that taught me that food, taken seriously, is not at all one of the lesser forms of art.

Okay, does anyone know how to make a thing that might be called aceite de chile? It’s a Mexican salsa that seems to consist mostly of oil with some sort of hard cracked pepper flakes in it. Might be garlic in it, as well. The oil comes out looking very red—hot enough to burn, but not mouth mace. I’ve spent all my spare time this morning Googling this and I can’t even find a place to get started. I really don’t want to have to go back to freaking Yucatán just to get this stuff.
